Heat 1 tsp sesame oil (1) in nonstick skillet over medium-high heat;
Add 1/2 c cooked brown rice (3) and heat through.
Add 3/4 c defrosted frozen peas and carrots (1), and 3 oz chopped cooked chicken (1);
Toss and heat through .
Push rice mixture to side of pan and crack 1 large egg (2) in middle;
Scramble egg.
Stir egg into mixture;
Sprinkle with reduced-sodium soy sauce (or sald and pepper);
Garnish with scallions (0).
