This is an old Weight Watchers recipe. 7 Points.
Heat 9 inch pan, spray with Pam.
Add eggs, stir until scrambled. Remove from pan and chop into small pieces. Set aside.
In same pan, heat oil. Add celery, onions and carrots. Cook quickly until tender. Stir in rice and soy sauce. Cook over high heat stirring constantly till rice is hot, about 3 minutes.
Add scrambled eggs and chicken. Stir to combine. Serve immediately.
This Recipe makes two large servings! Delicious!
