Chicken? It's really tenderized cubed beef.... don't ask me.... I didn't name it!
4 tenderized cube steaks laid to soak to cover with milk or buttermilk. Soak 2 hours to overnight.
In a large zip lock bag, place 2 sleeves saltine crackers. Close with no air in bag. Place bag on counter and use rolling pin to crush the crackers but ONLY until coarsely crushed.... do not over crush then place in a pan. Add a little a little more than 3/4 c flour, 3 TB salt, 1 TB black pepper. Mix well. This is the dredge.
Place enough veggie oil in cast iron skillet to fill 1 inch high. While this is heating, get one of the steaks in milk, drain a little and then place inside the dredge. Cover with dredge completely and press.... and I mean really press the dredge into the steak. Once all done dredging the steaks, place in pan to fry. Lay in grease away from you to avoid burning yourself. Fry 3-5 minutes on each side until golden, crispy fried -- set on drain rack and cover while you make the gravy.
Creamed gravy. Pour all oil out of pan, leaving about 1/2 cup in pan. Add 2/3 flour. Stir and stir and stir until brown. Add 1 c milk and stir non stop on medium heat until the consistency you like.... feel free to add a little milk here and there to get it just right. Salt and pepper to taste.
Excellent with mashed potatoes and green beans or mashed taters and small salad.
