Suggest a better descriptionIn an 8"x13" baking dish, build 2 "birdnests" out of the garlic cloves, reserving 9 cloves. In one chicken, place the stick of butter (or margarine) and 6 garlic cloves. In the other chicken, place 3 garlic cloves. Place chickens on top of the nests, cover with aluminum foil and bake for 1 hour at 350 degrees. Remove chickens from oven and serve the first one for dinner. Debone and cut up the second chicken. Strain liquid stock to remove the cloves. Pour stock into a container and refrigerate overnight. In the morning, the butter will have risen to the top. Scrape butter off top for future use as a wonderful garlic butter. Place halved onion cutside down in a hot soup pan and sear until smoking. Add water and bring to boil. Add chicken stock and bring to a boil. Add chicken, salt and chopped vegetables and bring to boil. Slowly add corn meal to thicken to desired consistency. Return to low heat and simmer 15 minutes. Remove from heat. Serve. Enjoy!!
