In a large mixing bowl, combine all ingredients down to cayenne pepper and mix well. Make sure chicken tenders are well coated in marinade. Cover and refrigerate between 1 hour - overninght.
Heat 1 tbsp olive oil in non-stick skillet over medium-high until shimmering. Add chicken tenders to the pan. Cook on one side undisturbed for 5 min, then flip and cook on other side for 5 min.
Prepare other fixings, and wrap in pita with tzatziki to make a gyro.
