Suggest a better descriptionIn a large skillet, heat olive oil over medium high heat, swirling to coat the bottom of the pan. When the oil is hot, add the chicken. Season the chicken with salt and pepper. Cook until browned. Add walnuts and cook until chicken is browned on all sides and walnuts are toasted (2 to 3 minutes). Add the sweet potato, apple, and red pepper flakes, and cook until chicken is fully cooked, 3 to four minutes.
Add the apple cider and mix, scraping the bottom of the pan. Add arugula and cook until wilted, 2 to 3 minutes.
