Combine marinade ingredients and marinate chicken for 30 minutes.
Slice vegetables, mix and set aside. Blend Sake Sauce ingredients and set aside.
Brown chicken in tablespoons oil to which you have added a half finger of crushed ginger. Add all vegetables and cook for 1 minute. Add sake sauce and bean threads and simmer on medium for 5 minutes.
Drain tofu, cut into bite-sized cubes and add to everything. Mix lightly then remove from heat.
Serve with hot steamed rice.
