Preheat oven to 180°C.
Place chicken in an ovenproof dish.
Combine soy sauce, tomato sauce, honey, brown sugar, vinegar, ginger, garlic and water in a bowl and pour over the chicken.
Bake uncovered for 45 minutes or until tender.
Note: Chicken can be marinated in the sauce overnight and/or cooked on a barbecue if desired.
The chicken is usually cooked in 45 minutes but we like to allow it to cook longer in the sauce 1 to 1.5 hours so that the meat is very tender and falling from the bones. Just need to check occasionally and adjust if necessary to make sure it does it doesn't burn.
