Heat the oil and butter in a large frying pan.
Add chicken and cook briefly to seal, add the onion and cook until translucent. Remove pan from the heat.
Warm the brandy and ignite. Wait for the flames to die down.
Add mushrooms, pour over the cream and season to taste.
Transfer everything to an oven proof dish and cover with foil.
Bake for an hour, serve with mustard mash.
