A delicious adobo from the south of Mexico. It is often served as a weekday dish. While its full of flavor, its not spicy so all the family can easily enjoy it. This adobo goes great with any greens so don't fret if you can't find spinach.
• Heat the oil in a medium pot over medium-high heat. Brown chicken in batches, about 3 minutes per side. Re move chicken and place in shallow dish. Add onion to the pot and fry until soft and lightly golden, about 8 minutes. Reserve.
• Add the Oaxaca paste to the same pot over medium high heat. Cook for 1 minute stirring frequently. Add the chicken broth and simmer for 15 minutes, stirring frequently.
• Add the chicken and partially cover the pot over medium heat for another 15 minutes. Stir in the spinach, cover partially, and cook for another 15 minutes or until the chicken is fully cooked. Uncover and cook over high heat for 5 minutes or until the sauce thickens. Season with salt.
• Serve one piece of chicken on each plate, arranging the spinach on the sides. Provecho!
