In large skillet, heat oil over medium-high heat. Brown chicken and onion.
In food processor bowl fitted with metal blade, process salsa, lemon juice, peanut butter and garlic until smooth.
Pour sauce over chicken. Bring to a boil. Reduce heat to low; simmer 5-7 minutes or until chicken is no longer pink in center.
Serve chicken with sauce and cilantro.
