Sheet pan chicken with Indian flavors

Preheat oven 425
Season chicken pieces with curry powder, may let sit for couple hours in refrigerator (optional)
Line sheet pan with heavy duty aluminum foil and place chicken on pan
Toss vegetables with cumin and garlic and salt & pepper
Place in pan surrounding chicken
Roast 20 minutes; toss vegetables to ensure cook evenly
Return to oven for 10-20 minutes more (30 - 40 min total roasting time)
Serve as is, or top with garnishes of choice - lemon wedges, dollops of yogurt, chopped cilantro or mint
