1. Melt butter, add garlic, sauté a minute.
2. Add flour and cook until bubbly.
3. Add stock and soy sauce, mix thoroughly with wire whisk.
4. Add chicken and salt and pepper to taste.
5. Heat and serve immediately over rice and fried Chinese noodles (if desired).
Hint: Add chicken just before serving; if it sits in liquid, it will disintegrate into a stringy mess!
This is good with green beans cooked with water chestnuts, and cranberry sauce, or spiced red apple (or something similar for color and a sweet-tart taste.)
