Pound chicken with mallet until even thickness. Combine eggs, salt, pepper and garlic powder. Dissolve the cornstarch in water and add to egg mixture. Coat chicken with egg mixture, then dip in Panko. Fry in oil until brown and crispy. Drain on paper towels. Cut into strips.
Combine all ingredients and bring to a boil. Dissolve cornstarch in some water to thicken the boiling sauce. Serve with chicken.
