Cook chicken breast either by roasting or boiling.
When cooled, shred into small bite-size pieces.
Put chicken stock in a large pot and bring up to heat. Add the chicken, chopped leeks, diced chilli, and tins of corn. Season with salt and pepper to taste.
Bring up to a boil, decrease heat, cover, and simmer for 20 - 30 minutes.
Serve alone or with slices of bread.
