Finely chop 1/2 fresh lemongrass stalk, 1/2 fresh chilli (or according to taste), 1 kaffir lime leaf and 2 cloves of garlic. Cook on
med heat in a non-stick pan with spray for a few minutes, add chicken sliced to 3mm strips and cook until tender. Add 1/2 cups of water, salt and cabbage, simmer for 20 mins. Add chopped fresh coriander leaves and snow peas and simmer for a few minutes. Serve with some more fresh coriander leaves
