2. Combine marinade ingredients. Marinate chicken for 15 mins.
3. Heat wok with oil, add chicken and stir fry 5 mins. Remove from heat.
4. Add more oil to pan with ginger, garlic, chilies, and onion; stir fry 1 min. Add mushrooms, bamboo shoots and water chestnuts; stir fry additional 2 mins. Return chicken to pan with cooking sauce. Cook until thickened.
5. Serve with lettuce leaves.
