A favorite Italian meal that doesn't take long to prepare. Similar to, but we think much better than Chicken Marsala. We really like the sauce, so this recipe has a generous amount slightly thickened.
Preheat oven 400 F
Fillet each half of the chicken breast to reduce the thickness. Pound pieces to 1/8 inch thickness with meat maillot to thin and tenderize.
Combine cheeses. Spray 13 x 9 baking dish with cooking spray.
Saut? mushrooms in 2 Tbl olive oil just until tender, remove mushroom from pan and set aside.
Coat chicken in flour, then brown in 1-2 Tbl olive oil in large skillet; cooking over medium heat 2-3 minutes on each side or until golden. Be sure to save pan drippings in skillet.
Place chicken in prepared baking dish. Top chicken with mushrooms (and sun-dried tomatoes if desired).
Add wine and broth to drippings in skillet, bring to boil, reduce heat and simmer uncovered 10 minutes stirring occasionally. Stir in salt & pepper. Pour 1/4 cup over Chicken then sprinkle with cheeses & green onion. Bake uncovered at 400 for 8-10 Minutes. Broil 5 inches from top element 1-2 minutes or until browned.
Make sauce by mixing 2 Tbl cornstarch with 1/4 cup water, mix into wine broth in skillet and simmer until thickened.
Serve chicken and sauce over pasta or rice.
