Just add Chicken
Reduce Marsala wine by half. Reduce Chicken stock by half. Combine and add cream. Reduce by a quarter. Add your roux a little at a time until the thickness is as you want. Chop and sauté your choice of mushrooms. Add to sauce, season with kosher salt, fresh ground white pepper to taste and simmer. Ladle over any type of Chicken.
Make sure you add your roux a little at a time to ensure not over thickening. If it is over thickened, simply add a little more chicken stock to loosen. DO NOT SEASON UNTIL YOU ARE READY TO SIMMER!!! When you reduce, you are concentrating flavor and may not need much seasoning.
