Heat oil and butter in a medium skillet; then add shallots. Salt and pepper the chicken, then dust with flour. When shallots begin to brown, add chicken and cook over high heat, turning, for a minute or two. Add marsala. (If mushrooms are used, saute in 1 teaspoon vegetable oil until moisture cooks out, the add to chicken when marsala is added.) Cook until sauce thickens, over high heat. Serve immediately on hot plates.
