Preheat oven to 400 degrees. Toss bread cubes on baking sheet with 2 teaspoons olive oil and salt & pepper. Toast for 7 minutes.
Season zucchini with salt & pepper.
Heat 2 teaspoons olive oil in pan over medium heat. Season chicken on all sides with salt & pepper. Cook 6 minutes per side. Cool and dice.
Make dressing. Add dressing, mozzarella, bread cubes, chicken, mint, arugula, and nectarine slices to bowl of zucchini.
Serves 4.
