* Broth should be made ahead of time.
* Chicken should be cooked ahead of time and seasoned with salt and pepper. Make ahead of time.
* Cut and peel a knob of ginger. Blitz in a blender with a bit of water. Make ahead of time.
* Measure out 2 cups of broth + 1 cup of water.
* Measure out 3 oz of pasta or noodles.
* Small dice a 1/4 of a large onion. It was around 2.3 oz.
* Med dice a small carrot. It should be around 1.5 oz.
* Med dice a stalk of celery. It should be around 1.8 oz.
* Optional: Squeeze juice from lemon. Chop some parsley.
Cooking:
1. In a dutch oven, heat oil over med heat. Add in the onions. Let them sweat for [5 -8 min] until translucent. Stir occasionally to prevent burning.
2. Next, add in a dollop of pureed ginger. Cook for [1 min]. Then add in a bit of the broth mixture. Deglaze the bottom with a wooden spoon. Then add in the rest of the broth. Then let it come to a boil. [1-5 min]
3. Add in the carrots, celery, and the cooked chicken as well. Lower the heat to low. Let the noodles and vegetables cook slowly while covered for [15 min].
4. Finally, add in the pasta or noodles. Ignore the packet instructions. Continue to cook covered on low for another [15 min]. The vegetables should be tender and with plenty of liquid remaining.
5. Add salt to taste. Optionally, add in some lemon juice and garnish with parsely.
For spices, I use: 1 t salt, 1/4 t white pepper, 1/4 t garlic powder, 1/4 t oregano powder.
