Cut chicken breasts into halves
Place the flour in a resealable plastic bag and season with the garlic, 1 tsp of salt and 1 quarter tsp of pepper
Place chicken pieces in bag and coat in flour, in batches until all chicken pieces are coated
Put breadcrumbs on plate, season with salt and pepper and set aside

Whisk the egg and 1 tsp water in a medium bowl. Remove a piece of chicken from the flour, dip in the egg mixture, then roll in breadcrumbs until covered, then set on a plate
Repeat with remaining pieces of chicken

Heat the oil in a large frying pan over medium heat. Add the chicken pieces to the pan (work in batches if necessary) until they are fried brown on both sides
Transfer to a paper-towel to dry, then salt and serve while still hot
