A classic favorite. Easy, sort of fast, and delicious every time.
Preheat oven to 350 degrees F.
Pound chicken breasts.
Whisk eggs and water together in a small bowl and stir the Parmesan into the breadcrumbs in a separate bowl.
Keep one hand for dry ingredients and the other for wet ingredients. Dredge the chicken in flour. Be sure to coat both sides. The dredge the chicken in the egg mixture. Finally, dredge the chicken in the cheese and breadcrumb mixture.
Saute the chicken breasts in olive oil approximately one minute on each side in a saute pan until golden brown. Do not crowd the pan.
Transfer chicken breasts into a casserole dish.
Cover the chicken with tomato sauce and top each breast with a slice of mozzarella cheese.
Cook in the oven until the chicken is done, about 10 to 20 minutes.
Remove from oven. Serve over pasta, if desired.
