Cover Chicken with wax paper, pound thin to tenderize.
Heat skillet with vegetable oil.
Preheat oven to 350.
In dipping bowl add 2 eggs, milk to liking, pinch of salt & pepper.
Dip Chicken in egg mixture, cover in bread crumbs.
Add breaded chicken to pan, brown each side.
In baking pan, cover the bottom with red sauce, add browned chicken, add red sauce over the top of the chicken. Sprinkle with Parmesan Cheese. Cover with aluminum foil and bake for 30 minutes.
Remove chicken from oven, add Mozzarella Cheese, Parmesan Cheese, and fresh basil if desired. Put uncovered in oven just long enough to melt the Parmesan Cheese.
