Start by flattening the chicken. To do this, take a strip on saran wrap and place it on the counter. place water on saran wrap and chicken on top, and more water on top of chicken. fold saran wrap over and hit with a Tenderizer. Don't hit straight down on the chicken but off to the direction you want it to flatten out in. If needed, you can butterfly the chicken before hand. Salt chicken on both sides after it is semi flattened. If the chicken is big, you could cut it in half for separate portions.
Prepare 3 bowls with these ingratiates mixed in.
--1/2 Cup Flour
--3 Eggs (Whisked well)
--3/4 Cup Flour
--1 Cup Breadcrumbs
-Spices could include...
--1 tsp salt
--1 tbsp paprika
--1 tbsp garlic powder
--1/2 tsp cayan
--dash of pepper
Dip the chicken in order of bowl 1, 2, 3, 2, 3. Make sure to wipe off excess eggs when taking out of bowl 2.
Preheat your cooking oil to 340 degrees and your oven to 350 degrees.
When your chicken is ready, place it into a deep fryer 4-6 minutes. Once golden and crispy, place on a deep backing pan or a regular pan. Place a light amount of sauce on top of chicken, followed by chopped spinach and mozzarella. Some people rather not putting sauce on top of chicken, since it may make the breading mushy, but I tend to just put a small amount on to prevent this. Place in oven for 10-15 minutes, and broil for a couple of minutes if needed. Heat pasta sauce and cook spaghetti pasta during this time. Plate when all is completed.
