Preparation:
Chop 1 tsp fresh rosemary leaves
Chop 1 tspfresh thyme leavesChop 1 tsp pasley leaves
Cut 4 chicken breasts into 8 cutlets
Cut 2 Tb butter into 8 pieces
1. Preheat the oven to 500F
2. Stir 3 Tb oil and herbs in a small bowl to blend. Season with salt and pepper. Brushboth sides of the cutlets with the herb oil.
3. Heat a heavy large oven-proofskillet over high heat. Add the cutles and cook just until brown, about 2minutes per side. Remove the skillet from the heat.
4. Spoon 1.5 cup TomatoSauce over and around the cutlets. Sprinkle 1 Tb of mozzarella (1/2 cup total)over each cutlet, then sprinkle 2 tsp of Parmesan over each. Sprinkle the butterpiece atop the cutlets. Bake until the cheese melts and the chicken is cookedthrough, about 3 to 5 minutes.
