Preheat oven to 350 degrees.
Combine first 6 ingredients (1 tablespoon of Parmesan) in a shallow dish. Spread Dijonnaise on each chicken breast and push down in Panko mixture; turning to completely coat. Arrange chicken in 13 x 9-inch baking dish coated with cooking spray. Bake at 350 degrees for 25 minutes or until crisp. Mix spaghetti sauce with a 4 ounce jar of sliced mushrooms and pour over chicken. Mix mozzarella cheese and 1 tablespoon of Parmesan; sprinkle over chicken. Bake until cheese melts.
Serve with a 2 ounce portion of Angel Hair pasta and chopped broccoli.
