Note from original author: Give refrigerated pizza dough a quick Mexican twist by topping the dough with picante or taco sauce -- that's Spanish for spicy! Top with chicken, red sweet peppers, onions & cheddar cheese, then bake until golden.
1. In a large non-stick skillet, cook the chicken strips in hot oil over medium-high heat for about 5 minutes or until the chicken is no longer pink. Remove the chicken from the skillet.
2. Add the sweet pepper & onion to the same skillet. Cook for about 5 minutes or until the vegetables are tender. Remove them from the skillet & set them aside.
3. Coat a 15 x 10 x 1 inch baking pan with non-stick cooking spray. Unroll the pizza dough into the pan. Press with your fingers to form a 12 x 8 inch rectangle. Pinch the edges of the dough to form a crust.
4. Spread the crust with the picante sauce. Top that with the chicken & vegetables. Sprinkle with the cheddar cheese.
5. Bake in a preheated 400ºF oven for 13 to 18 minutes or until the crust is brown & the cheese melts.
