Healthy Easy Chicken Pasta Recipe
1. Pour buttermilk into a shallow dish.
2. Place pretzels in a food processor and pulse until finely crushed. Place curmbs in another shallow dish.
3. Divide chicken into pieces, approx 4 ounces each, and place between plastic wrap. Pound until very thin with a mallot.
4. Heat olive oil in a large nonstick skillet over medium-high heat. Dip peach piece of chicken into buttermilk and then coat evenly with pretzel crumbs. Place chicken in skillet and cook for 2 to 4 min or until golden. Turn and continue cooking for 2 to 4 min or until chicken is cooked through.
5. Remove chicken to a platter and keep warm in oven while preparing sauce. (If coating starts to overbown while cooking chicken, remove chicken from skillet, place in an ovenproof dish and bake at 350 degrees until chicken is done.)
6. Add wine, chicken broth, and lemon juice to skillet. Bring to a boil; reduce heat to a simmer and simmer, uncovered, for 5 min.
7. Whisk flour into evaporated milk. Pour milk mixture into lemon juice mixture in skillet. Cook, stirring constantly until sauce bubbles and thickens.
8. Ladle sauce over chicken and sprinkle with parsley serve with spaghetti.
