Suggest a better description1. Preheat over to 350. Grease a casserole dish.
2. Toss diced chicken with fajita seasoning, then spread it onto the greased casserole dish. Bake the chicken for about 15-25 minutes.
3. Heat the oil in a large saucepan over medium heat. Stir in peppers, onion and chicken. Cook and stir until vegetables are tender and chicken is cooked, about 10 minutes.
4. Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the cheddar cheese and bacon bits, if using. Add the diced tomatoes, if using. Then top with the Monterey jack cheese. Fold the tortillas and bake until cheese is melted and tortillas are lightly browned, about 10-12 minutes.
