1. Heat up a 2-litre claypot with oil, add ginger slices to stir fry.
2. Add peppercorns to fry till fragrant.
3. Place chicken, skin side down to fry over high heat for about 5 mins.
4. Turn over the other side of chicken using a pair of kitchen thongs to saute.
5. Add water and red dates. Cover to simmer over low heat for 45 to 50 mins.
6. Add in spring onions and sesame oil. Cover again to simmer for another 15 mins.
7. Turn off heat, serve and garnish with chopped coriander leaves.
