Our friend Patty made this one evening and it is very delicious. I don't know where the recipe originated - perhaps the good people at Rice-a-Roni?
Cook rice as per directions. Cool. Drain & chop artichoke hearts, save liquid.
Combine mayo, curry powder and some of the artichoke juice.
Mix all together.
Let sit overnight
It is best if you can find tender Artichoke Hearts. I also like to use the non-marinated ones.
