Chopped chicken filet in cream sauce with garlic, honey, Roquefort cheese, Parmesan cheese and olive oil. Served with rice or pasta.
Make sure that your chicken is fresh or defrosted before preparing the food. Chicken tend to get Tough if you cook it while it's still frozen.
Chop the onion and garlic. Brown it together in a pan that is deep or a sauce pan, on medium heat with olive oil, and if you wish for extra taste, add a spoon of margarine.
Put the cream together with the onion and let it mix. Add salt and lime pepper, add as you please since everyone have different taste buds.
Add the coconut milk.
Add the Roquefort cheese and make sure it melts.
Add the honey and mix together well.
Fry the chicken in a frying pan, but be careful so the pieces doesn't get too brown.
After a little frying, mix together with the sauce.
Add the water.
Make sure that all pieces of chicken are covered with the sauce so that the chicken get cooked when it's boiling.
Turn down to low heat!
Now put some water, approx. 4dl in a sauce pan.
Add the amount of rice depending on how many people you are, I always put some extra just incase, cause it's always better to have more than less.
After you put the rice in the water, fry it a little bit with oil, salt and a spoon of margarine. But don't burn it to the bottom of the sauce pan, always keep stirring fast.
I like to flavor my rice with brothel with taste of vegetables.
Now add more water if you did not use liquid brothel. Make sure you add water or liquid brothel, so that the water reaches 2 x the size of the tip of your thumb. Let it boil on medium heat with the lid on. Occasionally stir so that the rice doesn't stick to the bottom.
When the water is gone and the rice is moist the rice is ready. But taste it first to make sure it isnt hard.
Do also taste the sauce before serving, and use a spoon, but never the same spoon twice ;D
Now put the rice on the plate/plates and add the sauce. Sprinkle some Parmesan cheese and some olive oil, and it's DONE!
P.S you can also eat the chicken and sauce together with any kind of pasta, I recommend gnocchi.
