Chunks of chicken in a rustic pan sauce with some interesting ingredients
saute pepper, onion and garlic in olive oil (Red Pepper Oil gives a nice zip to sauce) till soft, about 5 minutes. Add can of diced tomatoes, 3-4 ounces of the tomato sauce, tomato paste, salad dressing, wine and honey. Place raw chicken breast on top of sauce, stir to mix in. Cover dish and cook on medium heat for 15 minutes until chicken is cooked through. Just before serving add cheese and simmer until melted. Serve over pasta of your choice.
This dish is Very simple to make and very quick. The surprise is using the Italian Salad dressing - it really cuts the bitterness of the tomatoes and adds a nice flavor. I get asked to make this often
