Joy's famous chicken salad
Cove chicken breast with water just over the top of chicken.
Add all ingredients except lemon juice and mayo.
Bill until chicken is just done, check at about 20 minutes.
Pour in colander to drain.
Cut chicken into small pieces.
Add lemon juice and stir it around chicken to get it on all chicken.
cut celery into small pieces
add mayo.
