Suggest a better description1. Bring chicken to a boil in water to cover in a large dutch oven over high heat. Reduce heat. Simmer for 20 minutes. Remove from heat, drain well. Cool completely. Shred and cut into bite-size pieces.
2. Stir together chicken and next six ingredients. Season to taste with salt and pepper. Cover and refrigerate.
3. Serve with toasted baguette slices or over salad.
