This is THE BEST-EST chicken salad EVER! I have lost track of how many people have asked for this recipe!! It' s good solo or on good sandwich rolls.
Mix all ingredients except parsley, cover, and chill 2-3 hours. Taste for salt and adjust. Sprinkle with parsley and serve.
I usually leave out the scallions - include them if you like! I use Ken's Country French dressing and always use Miracle Whip instead of mayo.
