SImple chicken salad.
Cook chicken breast in microwave or bake in oven. When cooled completely, chop into bite size pieces. Clean and chop four stalks of celery. Combine chicken, celery, salt, pepper, lemon juice, and mayonnaise in mixing bowl. Chill salad until served. Great on thick cut bread, croissants, or wraps.
I never make this salad the same. I use more or less of all seasonings, depending on my taste that day. Salad is also good with dried cherries or cranberries, almonds, pecans, apples, or grapes added.
