Cover chicken breasts in water and boil till done (approximate 20 minutes). Add to the water before boiling 3 slices of onion, 1 stalk of celery broken in half, 1 carrot broken in half, 1 bay leaf, 6-8 peppercorns.
Cut up cooked chicken breasts into small chunks, add 3 slices of onion finely chopped, 1 stalk of celery finely chopped, 2 medium apples peeled, cored and chopped into small bite size pieces. Mix together with mayo till moisten (but not runny)
Salt and Pepper to taste.
Refridgerate. May need more mayo before serving.
