Spread each flatbread with 1 tbsp olive oil. Grill until lightly charred.
Spread 1 flatbread with 2 tbsp Sage Aioli. Layer 3 oz chicken, 2 oz mozzarella, 3 prosciutto slices and 2 oz pepper on flatbread. Roll up, burrito-style; cut diagonally in half.
Repeat to make 4 wraps. Serve immediately or hold refrigerated until service.
