In a large skillet brown chicken in oil, turning once. Add
garlic, onion,
and red, green and jalapeno peppers; saute 2 minutes.
Drain off fat, pat
skillet with paper towel to remove oil. Mix in broth,
raisins, tomato
paste, and coriander. Bring to a boil, reduce heat, cover
and simmer 10
minutes. Uncover and cook 10 minutes longer or until
chicken is tender and
sauce is slightly reduced. Sit in red and black pepper.
Taste. If needed,
