Suggest a better descriptionDice Onion, medium dice Tomato, and finely dice Garlic.
Heat a drizzle of oil in a large pot over Med-Hi heat. Add Onion, season w/ S&P.
Cook about 4 minutes, until softened. Add Chicken Sausage,, Garlic, and 1 tsp dried Oregano. Cook until Chicken is browned, about 5 minutes.
Add tomato and 3-4 Tbsp Tomato Paste. Cook until tomato begins to break down, about 2-3 minutes.
Stir in 2.5 cups Water, stock concentrate, and plenty of S&P, to taste.
Bring mixture to a boil and add Couscous.
Cook, stirring often, until al dente, 8-9 minutes. (Add water if it gets too thick)
Serve w/ sliced bread, topped w/ Parmesan.
