1. Preheat oven to 220 C. Line a baking tray with baking paper.
2. Place baby potatoes (uncut) in a bowl. Add 1 Tablespoon of oil. Toss to coat. Place on prepared tray in a single layer.
3. Bake for 20 minutes or until brown and tender.
Schnitzel:
1. Whisk eggs in a bowl.
2. Place breadcrumbs on a plate
3. Season flour with salt and pepper and place on a plate
4. Coat chicken in flour, shaking off excess. ip in egg and coat in breadcrumbs. Place on a plate.
5. Heat oil and butter in a frypan over medium-high heat. Cook chicken for 5 minutes each side until golden and cooked through.
6. Divide chips and chicken between serving plates. Drizzle with Gravy/lemon juice to serve
