Slice chicken breast thinly so the thickness is even. Place chicken into a plastic bag.
Squeeze lemon over sliced breast in plastic bag to marinate. Put aside for 10 minutes while you make the crumb.
In food processor, combine ripped up bread, cheese and herbs and blitz until crumbs appear.
Place flour in one bowl, eggs in one and the crumbs in a third.
Put fry pan on the heat with oil in the pan.
Take a fillet - coat in flour, then egg then crumbs, then fry lightly both sides - do this for all fillets in the bag until all are cooked
Add to a plate
Heat remaining oil in pan. Add onion. Cook, stirring, for 5 minutes or until softened. Add garlic. Cook for 1 minute or until fragrant. Stir in passata. Bring to a simmer. Simmer for 3 to 4 minutes or until slightly thickened.
Preheat grill on medium-high. Spoon half the passata mixture onto a baking tray. Top with chicken. Spoon over remaining passata mixture. Top chicken with mozzarella and parmesan. Grill for 4 to 5 minutes or until cheese is melted and golden. Stand for 2 minutes. Serve with salad or steamed veggies.
