Place chicken in a large resealable plastic bag.
Using a fine microplane grater grate in the lemon zest, then squeeze the lemons and add the juice. Pour in the olive oil and add the garlic. then add all of the remaining ingredients, except those for the sauce.
Squish everything together, then seal the bag, place it on a plate or in a dish and refrigerate for a least 6 hours and up to one day.
When ready to cook, preheat oven to 400 degrees (375 convection), remove the chicken from the refrigerator and bring to room temperature.
Tip the contents of the resealable bag onto a sheet pan and make sure all of the chicken thighs are lying flat and not on top of one another . Roast in a hot oven for 20-25 minutes (depending on size)until golden on top.
When the chicken is more or less cooked, make the sauce by combining the yogurt with the tahini and garlic , stir and salt to taste and sprinkle with pomegranate seeds.
Line a platter with the crisp shredded lettuce and top with the chicken pouring the juices over them. Serve with "Basmati Rice with With Indian Spices" (see Big Oven recipe) and "Carrots with Orange and Cumin" (see Big Oven recipe).
