Suggest a better descriptionHeat dressing in large deep skillet on med-high heat. Add chicken, onion, garlic and bell pepper. Cook ~ 5 minutes or until chicken appears cooked. Add broth and bring to a boil. Stir in rice, return to a boil. Cover and reduce heat to medium; simmer for 10 minutes. Stir in Neufchatel until melted. Add spinach on top; cover. Cook 1-2 minutes until wilted. Stir rice mixture gently to mix in spinach. Cover; remove from heat. Let stand 5 minutes. Sprinkle w/ parmesan and serve.
