Suggest a better descriptionIn large skillet or large, heavy pot, saute chicken and garlic in oil until chicken is partially cooked. Stir in 4 cups water, the reserved pineapple syrup, rice, vinegar, brown sugar, soy sauce, salt, gingerroot and black pepper. Bring to a boil. Reduce heat. Cover and simmer 12 minutes. Add green and red pepper and pineapple tidbits. Combine cold water (6 tablespoons) and cornstarch. Quickly stir into stew mixture. Bring to a boil. Reduce heat. Cover and simmer an additional 10 to 15 minutes, until peppers are tender.
