1. Rince the bones
2. Combine the bones and water.
3. Slowly bring them to a boil.
4. Skim the surface as necessary.
5. Simmer the stock for 4 hours. Add mirepoix and sachet d'spices in the last hour of simmering.
6. Using the fine sieve, strain stock. Use or chill and store. (Will freeze well)
A standard sachet consists of peppercorns, bay leaves, parsley stems, time, cloves and garlic. The exact amount depends on how much liquid is to be seasoned.
