1. Place all ingredients in pot and cover with 2 inches of water
2. Bring to a boil over medium high heat then reduce to low. Skim off any fat that forms on the surface. Simmer, uncovered, 75 minutes continuing to skim fat.
3. Remove chicken pieces, pick the meat off the bones and return bones to pot, adding water if necessary and simmer for 45 minutes.
4. Strain stock through sieve into containers.
